How was your weekend? We were suppose to go exploring on the weekend but had to cancel due to the poor weather. So instead I made this satay tofu sandwich. It is so pretty don't you think? I got the recipe for the satay sauce here . It uses real peanuts rather than peanut butter. For some strange reason lots of sites seems to prefer peanut butter. The sauce was simple and delicious, definitely a recipe worth keeping.

DeleteI have to say, I whizzed by your sandwich yesterday and hovered for a moment on how delicious it looked. Like you, I am too distracted and I didn't stop to say "yum". See, this is me dealing with my piles of blog posts and stopping and focussing and dealing with it. There, that felt better. Hope everything in your life comes into sharper focus soon too.
